The Star Mfg WS-59281 Thermostat With Dial 3/16" X 11-5/8" X 48" CAP 150°F-400°F BJWA regulates temperature by sensing heat through a remote bulb connected via capillary tubing and converting those readings into, switching actions. As internal temperature rises or falls the thermostat responds by opening or closing electrical contacts to control power supplied to heating elements based on the selected dial setting. This process maintains consistent operating conditions during cooking cycles. The unit is installed in compatible commercial cooking equipment, with the sensing bulb positioned inside the heated chamber and the dial mounted externally for adjustment during operation.
